This simple crock pot lasagna is perfect for a cheesy, comforting meal without heating up the kitchen!

Ingredients:

  • 1 lb ground beef
  • Lasagna noodles (enough to layer in your crock pot)
  • 1 jar (about 24 oz) of your preferred spaghetti sauce
  • 1 ½ cups cottage cheese
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Instructions:

  1. Cook the Ground Beef:
    • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Assemble the Layers:
    • Begin by spreading a thin layer of spaghetti sauce at the bottom of your crock pot.
    • Break lasagna noodles to fit the crock pot and place a layer on top of the sauce.
    • Add half of the cooked ground beef over the noodles.
    • Spread half of the cottage cheese on top of the beef.
    • Sprinkle with half of the mozzarella and Parmesan cheese.
  3. Repeat Layers:
    • Top the cheese layer with more spaghetti sauce.
    • Add another layer of noodles, followed by the remaining ground beef, cottage cheese, mozzarella, and Parmesan cheese.
  4. Cook:
    • Cover and cook on low for 4-5 hours, or until the noodles are tender and the cheese is melted and bubbly.

Tips:

  • For added depth of flavor, consider mixing a splash of red wine into the ground beef.
  • If your crock pot heats quickly, start checking the lasagna after 3 hours.
  • Let the lasagna sit for a few minutes before serving to avoid burns.
