  • 1 tablespoon fresh ginger, grated
  • 3 cups water
  • 2 potatoes, peeled and diced
  • 1 sprig thyme
  • 1 scotch bonnet pepper, sliced (optional for extra heat)
  • 1 bell pepper, sliced
  • 1/2 cup coconut milk

Instructions:
