Ingredients:
4 large flour tortillas
8 oz (225g) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup sliced strawberries
2 tablespoons butter
Powdered sugar for dusting
Optional: whipped cream or ice cream for serving
Instructions:
Make the Cheesecake Filling:
In a medium bowl, blend the softened cream cheese with granulated sugar and vanilla extract until the mixture is smooth and creamy.
Assemble the Quesadillas:
Place the tortillas on a flat surface. Spread a quarter of the cream cheese mixture over one half of each tortilla, then add a layer of sliced strawberries on top.
Cook the Quesadillas:
Fold each tortilla in half to cover the filling. Heat a skillet or griddle over medium heat and melt a small amount of butter in it.
Cook the folded tortillas for 2-3 minutes on each side until they turn golden brown and crispy, and the filling is warmed through.
Serve:
Remove the quesadillas from the skillet and let them cool slightly before cutting into wedges. Dust with powdered sugar.
Optional:
For an extra indulgent treat, serve with a dollop of whipped cream or a scoop of ice cream.
