Ingredients:
4 boneless, skinless chicken breasts
2 tomatoes, sliced
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 onion, finely chopped
2 garlic cloves, minced
2 tablespoons Herbes de Provence
Juice of 1 lemon
Olive oil
Salt and black pepper, to taste
Instructions:
Cook the Chicken:
Heat a bit of olive oil in a skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides. Remove the chicken from the skillet and set aside.
Prepare the Vegetables:
In the same skillet, add a touch more olive oil if needed. Sauté the chopped onion and bell peppers until they become tender.
Add Garlic:
Stir in the minced garlic and cook for an additional 1-2 minutes until aromatic.
Combine Chicken and Vegetables:
Return the chicken breasts to the skillet with the vegetables. Sprinkle with Herbes de Provence, salt, and black pepper. Pour the lemon juice over the top.
Add Tomatoes:
Arrange the tomato slices on top of the chicken and vegetables.
Simmer:
Cover the skillet and let everything simmer for 15-20 minutes, or until the chicken is fully cooked and the vegetables are soft.
Serve:
Serve the Provençal chicken hot, alongside rice, potatoes, or your favorite vegetables.
