Hearty Ham & White Beans

Ingredients:

  • 1 pound dried Great Northern beans
  • 1 smoked ham hock
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 6 cups chicken broth
  • Salt and pepper, to taste
  • Optional: chopped green onions for garnish

Instructions:

  1. Soak the Beans:
    • Rinse the beans and place them in a large bowl. Cover with cold water and let them soak overnight.
  2. Prepare the Ham:
    • In a large pot, submerge the ham hock in water and bring to a boil. Lower the heat and simmer for 1 hour. Remove the ham hock from the pot and set aside.
  3. Cook the Aromatics:
    • Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until they are softened and fragrant.
  4. Combine the Ingredients:
    • Drain and rinse the beans. Add the beans, ham hock, sautéed onions and garlic, thyme, rosemary, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beans are tender.
  5. Shred the Ham:
    • Take out the ham hock, shred the meat, and return it to the pot.
  6. Season and Serve:
    • Season with salt and pepper to taste. Serve hot, with green onions as a garnish if desired.
