Crispy Fried Meat Pies

  1. Prepare the Dough:
    • In a large bowl, mix the flour and salt. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the texture resembles coarse crumbs.
    • Slowly add the cold water, mixing just until the dough comes together. Knead gently, form into a ball, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  2. Prepare the Filling:
    • In a skillet over medium heat, cook the ground beef until it is browned. Add the chopped onion and minced garlic, cooking until the onion becomes translucent.
    • Season with salt, black pepper, paprika, and optional cayenne pepper. Pour in the beef broth and let it simmer for 5 minutes, allowing the mixture to thicken. Add green peas, if desired.
    • Remove from heat and let the filling cool.
  3. Assemble the Pies:
    • On a floured surface, roll out the dough to about 1/8 inch thickness. Cut out circles using a round cutter or a glass (about 4-5 inches in diameter).
    • Place a small amount of the meat filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges.
  4. Fry the Meat Pies:
    • Heat oil in a deep pan or fryer to 350°F (175°C). Fry the meat pies in batches, turning them until they are golden brown, about 3-4 minutes per side.
    • Remove from the oil and drain on paper towels.
  5. Serve:
    • Enjoy the meat pies hot, either on their own or with your favorite dipping sauce.
