Instructions:
- Prepare the Cream Cheese Mixture:
- In a medium bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Season the Sushi Rice:
- In a small bowl, mix the sugar and rice vinegar. Fold this mixture into the cooled sushi rice until thoroughly combined.
- Assemble the Rolls:
- Place a sheet of nori on a bamboo sushi mat lined with plastic wrap. Spread an even layer of sushi rice over the nori, leaving about 1 inch of nori at the top edge.
- Spread a thin layer of the cream cheese mixture over the rice, then arrange sliced strawberries on top.
- Gently lift the sushi mat and roll the nori away from you, pressing lightly to form a compact roll. Seal the roll by moistening the exposed edge with water and pressing to close.
- Finish the Rolls:
- Repeat the rolling process with the second sheet of nori.
- Coat each roll evenly with graham cracker crumbs.
- Serve:
- Slice each roll into 1-inch pieces and place them on a serving platter.
- Top with whipped cream and extra strawberry slices for garnish.
