Sweet Strawberry Shortcake

Ingredients:

  • 1 pound fresh strawberries, hulled and sliced
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1 cup whipped cream
  • 2 large sheets of nori (seaweed)
  • 2 cups sushi rice, cooked and cooled
  • 1/4 cup sugar
  • 1/4 cup rice vinegar

Instructions:

  1. Prepare the Cream Cheese Mixture:
    • In a medium bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Season the Sushi Rice:
    • In a small bowl, mix the sugar and rice vinegar. Fold this mixture into the cooled sushi rice until thoroughly combined.
  3. Assemble the Rolls:
    • Place a sheet of nori on a bamboo sushi mat lined with plastic wrap. Spread an even layer of sushi rice over the nori, leaving about 1 inch of nori at the top edge.
    • Spread a thin layer of the cream cheese mixture over the rice, then arrange sliced strawberries on top.
    • Gently lift the sushi mat and roll the nori away from you, pressing lightly to form a compact roll. Seal the roll by moistening the exposed edge with water and pressing to close.
  4. Finish the Rolls:
    • Repeat the rolling process with the second sheet of nori.
    • Coat each roll evenly with graham cracker crumbs.
  5. Serve:
    • Slice each roll into 1-inch pieces and place them on a serving platter.
    • Top with whipped cream and extra strawberry slices for garnish.
